About Honest Cattle
Dirk Adams founded Honest Cattle in 2025. He is a Montana cattle rancher and agricultural entrepreneur with more than forty years of experience in sustainable ranching, food-system reform, and rural economic renewal. Honest Cattle (honestcattle.net) grows directly out of that life’s work — and out of a simple conviction that the people who raise food honestly deserve a market that rewards them for it.
Dirk began in 1984 with three cows on 160 acres in Montana’s Shields River Valley. Over the next four decades he built that modest start into the Lazy SR Ranch (LSR), an 8,000-acre diversified, sustainable operation anchored by a 750-head premium Black Angus cow/calf herd known for its genetics, rotational grazing, and meticulous animal husbandry. The entire ranch was run without herbicides, pesticides, or synthetic fertilizer — a deliberate sustainability standard maintained at commercial scale. Lazy SR diversified into heritage Berkshire hogs (the only Berkshire Association–certified commercial herd in the Rockies), pasture-raised heritage poultry, heritage turkeys, and Targhee sheep, producing some of the highest-quality, sustainably raised meat in the Northern Rockies.
Dirk and his team designed and operated the only poultry processing plant between Minnesota and Spokane, giving independent producers legal access to markets while ensuring humane handling and HACCP compliance. Under the LSR Ranch label, he marketed beef, pork, and poultry directly to universities, grocers, hospitals, schools, and restaurants — including Yellowstone National Park — building one of Montana’s most respected local-food supply chains.
He also revived and managed the historic Wilsall General Store, turning a struggling rural grocery into a thriving community hub and increasing its annual revenue forty-fold through local sourcing and transparent pricing. He founded the Wilsall Ranch Rodeo — the first ranch rodeo in central Montana, now part of a regional circuit — and ran it as a nonprofit that has supported rural youth and cultural traditions for more than twenty years.
Beyond the ranch, Dirk’s leadership extended statewide. He was a tenure-track professor of law and policy at the University of Montana’s School of Business and an adjunct professor at Montana State University. He served on the boards of the Montana Stockgrowers Foundation and the Northern Rockies Rural Conservation & Development District, advocating for responsible land use, producer profitability, and fair labeling standards.
A 2019 Fellow of Harvard’s Advanced Leadership Initiative, Dirk worked with faculty at the Harvard Chan School of Public Health and with Amazon on a national framework to expand online food access and affordability by enabling SNAP benefits for online grocery purchases.
Today, Honest Cattle and its companion platform, Farm Animal Transparency (FAT) — farmanimaltransparency.com — represent the next phase of that work: improving inadequate meat-labeling practices, elevating ethical producers, and ensuring that consumers can truly know what they’re eating. FAT’s Meat Label Scanner, now in the Apple App Store, is the first consumer-facing, point-of-purchase disclosure tool for meat and seafood in the U.S., letting shoppers verify label claims across fifteen structured categories and surface USDA enforcement actions. Together, the two platforms promote honest labels, accountable supply chains, and a fair market for the farmers and ranchers who do things right.
Dirk is a Harvard Law graduate (cum laude) with more than 48 years bridging Wall Street and Main Street — former General Counsel of the Federal Home Loan Bank of San Francisco during the S&L crisis, CEO of Home Savings Bancorp, and Executive Vice President of the $130 billion Golden West Financial / World Savings. He now devotes that experience to Honest Cattle, Farm Animal Transparency (FAT), the FAT App, and the weekly Dylan Report — pioneering livestock-transparency technology and AI-assisted legal and agricultural innovation from the ground his work has always been rooted in.
